Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 cup unsalted butter, cold and cubed
  • 6-8 tbsp ice water
  • 6-8 ripe pears, peeled, cored, and sliced
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 egg, beaten

Directions

  1. In a large bowl, combine flour and salt. Cut in cold butter using a pastry blender until mixture resembles coarse crumbs.
  2. Slowly add ice water, 1 tablespoon at a time, while mixing with a fork until dough holds together.
  3. Divide dough in half, shape into two discs, wrap in plastic wrap, and refrigerate for 30 minutes.
  4. Preheat oven to 375°F (190°C).
  5. In a separate bowl, mix pears, sugars, spices, cornstarch, and lemon juice.
  6. Roll out one disc of dough on a floured surface to fit a 9-inch pie dish. Fill with pear mixture.
  7. Roll out the second disc of dough and place over the filling. Seal and crimp the edges, and cut vents on top.
  8. Brush the top crust with beaten egg and sprinkle with sugar. Bake for 45-50 minutes until golden brown.
