Ingredients

  • 1 cup granulated sugar
  • 4 tablespoons golden syrup
  • 1 tablespoon water
  • 2 teaspoons baking soda

Directions

  1. Line a baking sheet with parchment paper or silicone mat.
  2. In a medium-sized saucepan, combine the granulated sugar, golden syrup, and water.
  3. Place the saucepan over medium heat and stir until the sugar has dissolved.
  4. Once the sugar has dissolved, stop stirring and let the mixture come to a boil.
  5. Allow the mixture to boil for about 5-6 minutes or until it reaches a deep golden color.
  6. Remove the saucepan from the heat and immediately add the baking soda. Be careful as it will cause the mixture to foam up rapidly.
  7. Quickly stir the mixture until the baking soda is fully incorporated. It will become frothy and bubbly.
  8. Pour the foamy mixture onto the prepared baking sheet. Do not spread it out as it will naturally spread on its own.
  9. Let the honeycomb cool and harden at room temperature for about 1-2 hours.
  10. Once completely cooled and hardened, break the honeycomb into small pieces and store in an airtight container.
