Ingredients

  • 2 cups dried figs
  • 1/2 cup water
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup powdered sugar

Directions

  1. In a small saucepan, combine the dried figs and water. Bring to a boil over medium heat and let simmer for 10 minutes. Remove from heat and let cool.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until well combined.
  4. Preheat the oven to 350°F (175°C).
  5. Take the cooled figs and blend them in a food processor until smooth.
  6. On a lightly floured surface, roll out the cookie dough into a 1/4-inch thickness. Cut out round shapes using a cookie cutter.
  7. Place half of the cookie rounds onto a baking sheet lined with parchment paper. Spoon a teaspoon of the fig filling onto each round. Top with another cookie round and press the edges together to seal.
  8. Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown.
  9. Remove from the oven and let cool on a wire rack.
  10. Once the cookies are completely cool, dust them with powdered sugar.
