Ingredients

  • 12 large eggs
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • Food coloring (assorted colors)
  • Optional: Sprinkles or colored sugar for decoration

Directions

  1. Place the eggs in a large saucepan and cover with cold water. Bring to a boil over medium-high heat. Once the water reaches a rolling boil, remove the pan from heat, cover, and let the eggs sit for 12 minutes.
  2. Drain the hot water and transfer the eggs to a bowl of ice water. Let them cool completely and then gently tap each egg on a hard surface to crack the shell. Peel off the eggshell and set the eggs aside.
  3. In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the vanilla extract and mix well.
  4. Divide the buttercream mixture into separate bowls. Add a few drops of food coloring to each bowl and mix until the desired colors are achieved.
  5. Using a sharp knife or an egg-dyeing kit, carefully cut a small hole in the top of each egg. Use a spoon or your fingers to remove the yolks and transfer them to a separate bowl.
  6. Mash the egg yolks with a fork until smooth. Add the colored buttercream mixtures to the mashed yolks and mix until well combined.
  7. Place the colored yolk mixture into a piping bag fitted with a star-shaped or round tip. Pipe the mixture into the empty egg whites, filling each egg completely.
  8. If desired, decorate the filled eggs with sprinkles or colored sugar for added visual appeal.
  9. Refrigerate the eggs for at least 1 hour to allow the filling to set.
  10. Serve the Easter eggs chilled and enjoy!
