  • 1 tablespoon lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon cinnamon
  • 1 egg, beaten (for egg wash)

Directions

  1. In a large mixing bowl, whisk together the flour, salt, and sugar.
  2. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your hands to cut the butter into the flour until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, one tablespoon at a time, tossing the mixture with a fork after each addition. Continue adding water until the dough comes together and can be formed into a ball.
  4. Divide the dough into two equal pieces and shape each into a disk. Wrap them in plastic wrap and refrigerate for at least 30 minutes.
  5. In a large mixing bowl, gently toss together the blackberries, lemon juice, granulated sugar, cornstarch, lemon zest, and cinnamon until well combined.
  6. Preheat the oven to 375°F (190°C).
  7. Take one disk of dough out of the refrigerator and roll it out on a lightly floured surface to fit a 9-inch pie dish. Transfer the rolled out dough to the pie dish, pressing it gently into the bottom and along the sides.
  8. Pour the blackberry filling into the pie crust, spreading it out evenly.
  9. Roll out the remaining disk of dough and cut it into strips to create a lattice pattern on top of the filling. Alternatively, you can cover the pie with the whole rolled out dough, cutting slits for ventilation.
