Ingredients

  • 1 9-inch pie crust, baked and cooled
  • 3/4 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 tsp salt
  • 2 cups whole milk
  • 3 large egg yolks, beaten
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 3 ripe bananas, sliced
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract

Directions

  1. In a saucepan, whisk together sugar, flour, and salt. Gradually stir in milk.
  2. Cook over medium heat, stirring constantly until mixture thickens.
  3. Remove from heat. Stir a small amount of hot mixture into beaten egg yolks, then return to pan. Cook for 2 minutes, stirring constantly.
  4. Remove from heat and stir in butter and vanilla extract. Let cool slightly.
  5. Arrange sliced bananas in bottom of baked pie crust.
  6. Pour custard over bananas and chill for at least 2 hours.
  7. In a mixing bowl, whip cream until soft peaks form. Add powdered sugar and vanilla extract, and continue beating until stiff peaks form.
  8. Spread whipped cream over chilled pie. Garnish with additional banana slices if desired.
