Directions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium-sized bowl, whisk together the flour, baking powder, and salt for the cookie buns. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Mix in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until the dough comes together.
  5. Divide the dough into two equal portions. Roll each portion into a log, about 2 inches in diameter. Wrap in plastic wrap and refrigerate for 30 minutes to firm up.
  6. Meanwhile, prepare the cookie patty. In another medium-sized bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  7. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until creamy. Mix in the egg and vanilla extract until well combined.
  8. Gradually add the dry ingredients to the wet ingredients and mix until the dough comes together.
  9. Divide the dough into small portions and shape each portion into a patty shape.
  10. Place the cookie buns and patties on the prepared baking sheets, leaving space between each one. If desired, sprinkle sesame seeds on the cookie buns to resemble hamburger buns.
  11. Bake in the preheated oven for 10-12 minutes, or until the cookies are set. Allow them to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
