  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup guava puree
  • 1/2 cup vegetable oil
  • 6 large eggs, separated
  • 1/2 cup water
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 325°F (163°C).
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the guava puree, vegetable oil, egg yolks, and water to the dry ingredients. Mix until well combined.
  4. In a separate clean mixing bowl, beat the egg whites and cream of tartar until stiff peaks form.
  5. Gently fold the egg white mixture into the batter until fully incorporated. Be careful not to overmix.
  6. Pour the batter into an ungreased tube pan.
  7. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the cake from the oven and immediately invert the pan onto a wire rack to cool completely. This will prevent the cake from collapsing.
  9. Once the cake has cooled, run a knife around the edges to loosen it from the pan. Carefully remove the cake from the pan.
