Ingredients

  • 2 large cucumbers
  • 4 hard-boiled eggs
  • 1/4 cup mayonnaise

  • 1 tablespoon white vinegar
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh dill
  • 4 green onions, chopped

Directions

  1. Peel the cucumbers and slice them into thin rounds. Place them in a colander and sprinkle with salt. Let them sit for about 10 minutes to allow excess moisture to drain.
  2. While the cucumbers are draining, peel the hard-boiled eggs and chop them into small pieces.
  3. In a large bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, white vinegar, sugar, salt, and pepper. Add the chopped eggs, chopped dill, and green onions. Mix well to combine.
