- 24 ladyfingers
- 1 1/2 cups freshly brewed strong coffee, cooled
- 3 tablespoons coffee liqueur
- 32 ounces cream cheese, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 cup sour cream
- 1/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 8 ounces mascarpone cheese
- 2 tablespoons cocoa powder
Directions
- Preheat the oven to 325°F (163°C).
- In a shallow bowl, combine the cooled coffee and coffee liqueur.
- Dip each ladyfinger into the coffee mixture, turning to coat both sides. Line the bottom of a 9-inch springform pan with half of the soaked ladyfingers.
- In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy. Add the eggs, one at a time, beating well after each addition.
- Mix in the sour cream, flour, and vanilla extract until well combined.
- In a separate bowl, whisk the mascarpone cheese until smooth. Gently fold the mascarpone into the cream cheese mixture.
- Pour half of the cream cheese mixture over the ladyfingers in the pan. Smooth the top with a spatula.
- Arrange the remaining soaked ladyfingers on top of the cream cheese mixture. Pour the remaining cream cheese mixture over the ladyfingers and smooth the top.
- Place the springform pan on a baking sheet and bake for 55-60 minutes or until the center is set and the edges are lightly golden.
- Remove the cheesecake from the oven and let it cool completely on a wire rack. Refrigerate for at least 4 hours or overnight.
- Before serving, sift cocoa powder over the top of the cheesecake. Slice and serve chilled.
