Ingredients

  • 1 pound green beans, trimmed
  • 1 block firm tofu, cubed
  • 3 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • Salt and pepper, to taste

Directions

  1. In a large pot of boiling salted water, blanch the green beans for 2 minutes. Drain and transfer to a bowl of ice water to stop cooking. Drain again and set aside.
  2. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  3. In the same skillet, heat the remaining tablespoon of vegetable oil over medium heat. Add the minced garlic and grated ginger, and sauté for 1 minute until fragrant.
  4. Add the blanched green beans to the skillet and stir-fry for 3-4 minutes, until they are tender-crisp.
  5. In a small bowl, whisk together the soy sauce, sesame oil, cornstarch, and water until smooth. Pour the sauce over the green beans and tofu in the skillet, and cook for an additional 2 minutes, until the sauce thickens and coats the vegetables and tofu.
  6. Season with salt and pepper to taste.
