  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, melted
  • 1/4 cup molasses
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1 large egg
  • 1 teaspoon vanilla extract

Directions

  1. Preheat your oven to 375°F (190°C). Line a muffin pan with liners or grease with cooking spray.
  2. In a medium-sized bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, and cloves.
  3. In a separate large bowl, combine the melted butter, molasses, milk, sour cream, egg, and vanilla extract. Mix until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  5. Divide the batter equally among the prepared muffin cups, filling each about 2/3 full.
  6. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  7. Remove the muffins from the oven and allow them to cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.
