Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup canned coconut milk
  • 1 teaspoon vanilla extract
  • 6 large egg whites
  • 1 cup heavy cream, chilled
  • 1/4 cup powdered sugar
  • 1 can (20 ounces) of fruit cocktail, drained
  • 1 can (20 ounces) of pineapple tidbits, drained
  • 1 can (11 ounces) of mandarin oranges, drained
  • 1 cup sweetened shredded coconut

Directions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Add the softened butter, coconut milk, and vanilla extract. Beat the ingredients together on low speed until they are well combined.
  3. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cake batter until no streaks remain.
  4. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  5. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
  6. In a chilled mixing bowl, beat the heavy cream and powdered sugar until stiff peaks form. Set aside.
  7. Place one of the cooled cake layers on a serving plate. Spread a layer of whipped cream on top of the cake layer.
  8. Top the whipped cream with half of the drained fruit cocktail, pineapple tidbits, mandarin oranges, and sweetened shredded coconut. Press the fruits and coconut gently into the whipped cream.
  9. Place the second cake layer on top of the fruit and cream layer. Spread the remaining whipped cream on top of the cake layer.
  10. Decorate the cake with the remaining fruit cocktail, pineapple tidbits, mandarin oranges, and sweetened shredded coconut. Press them gently into the whipped cream, allowing some to fall on the sides for an attractive appearance.
  11. Refrigerate the Ambrosia Cake for at least 2 hours before serving to allow the flavors to meld and the cake to set.
  12. Slice and serve the chilled Ambrosia Cake as a refreshing and tasty treat.
