Ingredients

  • 1 ½ cups gluten-free flour blend
  • ½ cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon ground nutmeg
  • ½ cup milk (dairy or non-dairy)
  • 2 large eggs
  • 2 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • Vegetable oil (for frying)
  • For the Glaze:
  • 2 cups powdered sugar
  • ½ teaspoon vanilla extract
  • 4-5 tablespoons milk (dairy or non-dairy)
  • Food coloring (optional)
  • Sprinkles or other toppings (optional)

Directions

  1. In a large mixing bowl, whisk together the gluten-free flour blend, sugar, baking powder, salt, and nutmeg.
  2. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat vegetable oil in a deep fryer or large, heavy-bottomed pot to 375°F (190°C).
  5. Using a piping bag or a resealable plastic bag with the corner snipped off, pipe the dough in a circular motion into the hot oil, making rings approximately 3 inches in diameter.
  6. Fry the donuts for about 2-3 minutes per side or until golden brown and cooked through.
  7. Remove the donuts from the oil and place them on a paper towel-lined plate to drain excess oil.
  8. Prepare the glaze by whisking together powdered sugar, vanilla extract, and milk in a medium-sized bowl until smooth. Add food coloring if desired.
  9. Dip each cooled donut into the glaze and let excess glaze drip off. Alternatively, you can drizzle the glaze over the donuts using a spoon.
  10. Top the glazed donuts with sprinkles or other toppings if desired.
  11. Allow the glaze to set before serving the donuts. Enjoy!
