Ingredients

  • 3 pounds beef chuck roast
  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • ¼ cup soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

  1. Turn on the Instant Pot and select the 'Sauté' mode. Heat the vegetable oil and brown the chuck roast on all sides. This will take about 5 minutes.
  2. Remove the roast from the Instant Pot and set aside. Add the onion and garlic to the pot. Sauté for 2 minutes until fragrant.
  3. Deglaze the pot by adding beef broth, soy sauce, Worcestershire sauce, tomato paste, thyme, rosemary, salt, and pepper. Stir well to combine.
  4. Place the chuck roast back into the Instant Pot and add the carrots and potatoes on top.
  5. Close the Instant Pot lid and select the 'Meat/Stew' mode. Set the timer for 60 minutes.
  6. Once the cooking time is complete, allow the pressure to release naturally for 15 minutes. Then, carefully perform a quick release to release any remaining pressure.
  7. Using a slotted spoon, transfer the roast and vegetables to a serving platter and cover with foil to keep warm.
  8. To make the gravy, select the 'Sauté' mode and bring the cooking liquid to a simmer.
  9. In a small bowl, whisk together cornstarch and water to make a slurry. Slowly pour the slurry into the simmering liquid, stirring constantly. Cook for 2-3 minutes until the gravy thickens.
  10. Serve the pot roast with the homemade gravy and enjoy!
