Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 6 cups chicken broth
  • 2 cups cooked rotisserie chicken, shredded
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • 1 package (9 ounces) refrigerated tortellini
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté for 2-3 minutes until fragrant.
  2. Add the carrots and celery to the pot, and cook for an additional 5 minutes until slightly softened.
  3. Pour in the chicken broth, and add the shredded rotisserie chicken, dried thyme, dried oregano, dried rosemary, and bay leaf. Stir well to combine.
  4. Bring the soup to a boil, then reduce the heat to low and let it simmer for 10 minutes to allow the flavors to meld together.
  5. Add the tortellini to the pot, and cook according to package instructions until tender, usually about 5-7 minutes. Season the soup with salt and pepper to taste.
  6. Remove the bay leaf from the soup, and ladle it into bowls. Garnish with fresh parsley.
