Ingredients

  • 2 pounds pork shoulder, cut into thin strips
  • Satay Marinade:
  • - 2 tablespoons vegetable oil
  • - 3 tablespoons soy sauce
  • - 2 tablespoons fish sauce
  • - 2 tablespoons brown sugar
  • - 1 tablespoon turmeric powder
  • - 1 tablespoon coriander powder
  • - 1 teaspoon cumin powder
  • - 1 teaspoon chili powder
  • - 4 cloves garlic, minced
  • - 2 shallots, minced
  • Peanut Sauce:
  • - 1 cup roasted peanuts, finely ground
  • - 1/2 cup water
  • - 3 tablespoons soy sauce
  • - 2 tablespoons tamarind paste
  • - 2 tablespoons brown sugar
  • - 1 tablespoon vegetable oil
  • - 1 teaspoon chili flakes
  • - 2 cloves garlic, minced
  • - Salt, to taste

Directions

  1. In a bowl, combine all the ingredients for the satay marinade. Mix well.
  2. Add the pork strips to the marinade and coat them evenly. Let the pork marinate for at least 1 hour, or overnight for best results.
  3. While the pork is marinating, prepare the peanut sauce. In a saucepan, heat the vegetable oil over medium heat. Add the minced garlic and cook until fragrant.
  4. Add the ground peanuts, soy sauce, tamarind paste, brown sugar, chili flakes, and water to the saucepan. Stir well to combine.
  5. Simmer the peanut sauce over low heat for 5-7 minutes, stirring occasionally. Season with salt to taste. Remove from heat and set aside.
  6. Preheat the grill to medium-high heat.
  7. Thread the marinated pork strips onto skewers, making sure to leave some space between each piece.
  8. Grill the pork satay for 8-10 minutes, turning occasionally, until cooked through and slightly charred on the edges.
  9. Serve the Penang pork satay with the peanut sauce on the side. Optionally, garnish with sliced cucumbers, onions, and a squeeze of lime.
  10. Enjoy the delicious flavors of Penang pork satay!
