Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup stone-ground grits
  • 4 cups chicken stock
  • 1 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions

  1. In a large saucepan, bring the chicken stock to a boil. Stir in the grits and reduce heat to low. Cook the grits for about 20-25 minutes, stirring occasionally, until thickened.
  2. While the grits are cooking, season the shrimp with salt, black pepper, paprika, and cayenne pepper.
  3. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Add the diced onion and cook until translucent, about 5 minutes.
  4. Add the minced garlic and grated ginger to the skillet. Cook for another 2 minutes, until fragrant.
  5. Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove the shrimp from the skillet and set aside.
  6. In the same skillet, melt the remaining 2 tablespoons of butter. Stir in the cooked grits, heavy cream, and shredded cheddar cheese. Cook for 5 minutes, until the cheese is melted and the mixture is creamy.
  7. Return the cooked shrimp to the skillet and stir to coat them with the cheesy grits. Cook for an additional 2 minutes, until heated through.
  8. Serve the Ginger's Shrimp and Grits hot, garnished with chopped fresh parsley. Enjoy!
