Ingredients

  • 1 pound fresh salmon fillet
  • 2 tablespoons coconut flour
  • 1/4 cup almond flour
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup mayonnaise
  • 1 tablespoon dijon mustard
  • 1 tablespoon fresh dill, chopped
  • 1 egg
  • Salt and pepper to taste
  • 2 tablespoons olive oil for frying

Directions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the salmon fillet on the prepared baking sheet and season with salt and pepper. Bake for 12-15 minutes or until the salmon flakes easily with a fork.
  3. Remove the baked salmon from the oven and let it cool slightly. Once cooled, flake the salmon using a fork.
  4. In a large mixing bowl, combine the flaked salmon, coconut flour, almond flour, green onions, garlic, mayonnaise, Dijon mustard, fresh dill, and egg. Mix well until all ingredients are fully incorporated.
