Ingredients

  • 3 cups cooked jasmine rice
  • 2 tablespoons vegetable oil

  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 2 eggs, beaten
  • 1 cup diced cooked chicken
  • 1/2 cup diced cooked shrimp
  • 1/2 cup diced lychees
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 2 green onions, chopped
  • 1/4 cup chopped cilantro

Directions

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the minced garlic and diced onion to the skillet and cook until the onion is translucent.
  3. Add the frozen peas and diced carrots to the skillet and cook for an additional 2-3 minutes until the vegetables are tender.
