Ingredients

  • 2 cups fresh strawberries, diced
  • 1 1/2 cups sugar
  • 1/2 cup unsalted butter, softened

  • 1/2 tsp baking soda
  • 1/2 cup milk
  • 1/2 cup sour cream

  • 2 cups powdered sugar
  • 1/4 cup strawberry puree

Directions

  1. Preheat oven to 350°F and grease and flour a 9-inch round cake pan.
  2. In a medium bowl, mix diced strawberries with 1/2 cup sugar and let sit for 10 minutes.
  3. In a large bowl, cream 1/2 cup butter and 1 cup sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, and baking soda.
  6. Add dry ingredients to the wet ingredients, alternating with milk and sour cream. Fold in diced strawberries and strawberry puree.
  7. Pour batter into prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
