Indulge in the flavors of Finland with this delectable Finnish Blueberry Pie recipe. This pie is made with a buttery crust that encases a luscious blueberry filling. The sweet and tangy blueberries create a burst of flavor with every bite. Perfect for summer gatherings or a delightful treat any time of the year!

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup unsalted butter, chilled and cubed
  • 1/4 - 1/2 cup ice water
  • 4 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon milk
  • 1 tablespoon granulated sugar

Directions

  1. In a large mixing bowl, whisk together the flour, salt, and sugar.
  2. Add the chilled butter cubes into the flour mixture and use a pastry cutter or your fingers to cut the butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water, a tablespoon at a time, and mix until the dough comes together. Be careful not to overmix.
  4. Divide the dough into two equal portions, shape into discs, and wrap each disc in plastic wrap. Refrigerate for at least 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. In a separate mixing bowl, combine the blueberries, sugar, cornstarch, lemon juice, and lemon zest. Stir until the blueberries are well-coated.
  7. On a lightly floured surface, roll out one disc of the dough into a large circle, about 1/4 inch thick. Carefully transfer the rolled-out dough into a 9-inch pie dish, gently pressing it into the bottom and sides.
  8. Pour the blueberry filling into the pie crust.
  9. Roll out the second disc of dough into a similar-sized circle. You can either place it on top of the filling as a full crust or create a lattice design by cutting the dough into strips and weaving them over the filling.
  10. Trim any excess dough from the edges and crimp the edges using your fingers or a fork to seal the pie.
  11. Brush the top crust with melted butter, then sprinkle with milk and sugar.
  12. Bake the pie in the preheated oven for 45-50 minutes, or until the crust is golden and the filling is bubbly.
  13. Remove the pie from the oven and let it cool for at least 1 hour before serving. This allows the filling to set.
  14. Serve the Finnish Blueberry Pie at room temperature or slightly warmed. Enjoy!
