Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • 1 cup milk
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 2 cups cooked chicken, diced
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 cup shredded cheddar cheese
  • 1 package (14 ounces) refrigerated pie crusts

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a dutch oven or large oven-safe skillet, heat the olive oil over medium heat.
  3. Add the diced onion, garlic, red bell pepper, green bell pepper, and jalapeno pepper. Cook until the vegetables have softened, about 5 minutes.
  4. In a small bowl, mix together the ground cumin, chili powder, smoked paprika, salt, black pepper, and flour.
  5. Sprinkle the spice mixture over the cooked vegetables and stir to coat.
  6. Pour in the chicken broth and milk, stirring constantly until the sauce thickens.
  7. Add the diced tomatoes, cooked chicken, frozen corn, and frozen peas. Stir well to combine.
  8. Simmer the mixture for 5-10 minutes, until heated through.
  9. Remove the dutch oven from the heat and sprinkle the shredded cheddar cheese over the top.
  10. Unroll the refrigerated pie crusts and place one on top of the chicken mixture, trimming any excess crust.
  11. Cut a few slits in the top crust to allow steam to escape.
  12. Place the dutch oven in the preheated oven and bake for 25-30 minutes, until the crust is golden brown and the filling is bubbly.
  13. Remove from the oven and let it cool for a few minutes before serving.
