Ingredients

  • 6 Cubanelle peppers
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup shredded mozzarella cheese

Directions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Slice the tops off the Cubanelle peppers and remove the seeds. Set aside.
  3. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is tender.
  4. Remove the skillet from heat and drain any excess fat.
  5. Stir in the cooked rice, diced tomatoes, parsley, oregano, salt, black pepper, and cayenne pepper. Mix well.
