Ingredients
- 2 lbs chicken, cut into pieces
- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tomatoes, diced
- 1 teaspoon cumin powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 bay leaf
- 1 cup chicken broth
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Directions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chicken pieces and cook until browned on all sides.
- Remove the chicken from the pot and set aside.
- In the same pot, add the diced onion, minced garlic, red and green bell peppers. Cook until the vegetables are softened.
- Add the diced tomatoes, cumin powder, paprika, dried oregano, bay leaf, chicken broth, salt, and pepper. Stir well to combine.
- Return the chicken to the pot and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 1 hour, or until the chicken is fully cooked and tender.
- Remove the bay leaf and discard.
- Serve the Criollo de Pollo hot, garnished with chopped fresh cilantro.
