These Chunky Monkey Muffins are moist, chocolatey, and loaded with bananas and walnuts. They make for a perfect breakfast or snack option, and are loved by both kids and adults. These muffins are easy to make and will definitely become a family favorite!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 ripe bananas, mashed
  • 1/3 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup chopped walnuts

Directions

  1. Preheat the oven to 375°F (190°C). Grease or line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix together the melted butter, mashed bananas, buttermilk, and vanilla extract.
  4. Pour the liquid mixture into the dry ingredients and gently stir until just combined. Be careful not to overmix.
  5. Fold in the chocolate chips and chopped walnuts.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove the muffins from the tin and allow them to cool on a wire rack before serving.
