Ingredients

  • For the crust:
  • - 1 ½ cups graham cracker crumbs
  • - ½ cup melted butter
  • - ¼ cup granulated sugar
  • For the filling:
  • - 24 ounces cream cheese, softened
  • - 1 cup granulated sugar
  • - 3 tablespoons all-purpose flour
  • - 1 teaspoon vanilla extract
  • - 4 large eggs
  • - 1 cup sour cream
  • For the cranberry compote:
  • - 2 cups fresh or frozen cranberries
  • - 1 cup granulated sugar
  • - 1 cup water
  • - Zest of 1 orange
  • - 2 tablespoons orange juice
  • - 1 cinnamon stick

Directions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar for the crust. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and set aside.
  3. In a large mixing bowl, beat the cream cheese, sugar, flour, and vanilla extract until smooth and creamy. Add the eggs, one at a time, beating well after each addition. Stir in the sour cream.
  4. Pour the filling over the prepared crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 1 hour or until the center is set and the edges are lightly golden. Turn off the oven and let the cheese cake cool in the oven for 1 hour. Remove from the oven and refrigerate for at least 4 hours or overnight.
  6. In a saucepan, combine the cranberries, sugar, water, orange zest, orange juice, and cinnamon stick for the cranberry compote. Bring to a boil and simmer for 15-20 minutes, or until the cranberries burst and the mixture thickens.
  7. Remove the cinnamon stick and let the cranberry compote cool. Once cooled, spread the compote over the chilled cheese cake.
  8. Before serving, run a knife around the edges of the springform pan to loosen the cheese cake. Remove the sides of the pan and transfer to a serving plate.
  9. Slice and serve the Christmas cheese cake chilled. Enjoy!
