Ingredients

  • 3 pounds beef short ribs
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup sesame oil
  • 1/4 cup grated ginger
  • 4 cloves garlic, minced
  • 2 tablespoons sesame seeds
  • 2 green onions, thinly sliced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Directions

  1. In a large bowl, combine soy sauce, brown sugar, rice vinegar, sesame oil, grated ginger, minced garlic, sesame seeds, green onions, black pepper, and red pepper flakes (if desired). Mix well to combine.
  2. Place the beef short ribs in a large ziplock bag and pour the marinade over them. Seal the bag and massage the marinade into the meat. Marinate in the refrigerator for at least 4 hours, preferably overnight to allow the flavors to penetrate the meat.
  3. Preheat the grill to medium-high heat. Remove the ribs from the marinade, shaking off any excess marinade. Reserve the marinade for basting.
  4. Grill the ribs for about 5-7 minutes on each side, or until they are nicely browned and cooked to your desired level of doneness. Baste the ribs with the reserved marinade while grilling.
  5. Remove the ribs from the grill and let them rest for a few minutes before serving. Serve with steamed rice and kimchi for an authentic Korean meal.
