- 2 eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semi-sweet chocolate chips
- 1/2 cup heavy cream
Directions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until well combined.
- Using a tablespoon or cookie scoop, drop rounded portions of dough onto the prepared baking sheet.
- Bake for 10-12 minutes, or until the edges are set and the centers are slightly soft.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
- Transfer the cookies to a wire rack to cool completely.
- While the cookies are cooling, prepare the chocolate filling. In a microwave-safe bowl, combine the chocolate chips and heavy cream.
- Microwave in 30-second intervals, stirring well after each interval, until the chocolate is melted and smooth.
- Allow the chocolate filling to cool for a few minutes.
- Once the cookies have cooled, spoon a dollop of chocolate filling onto the bottom of one cookie.
- Place another cookie on top, bottom-side down, to create a sandwich. Gently press together.
- Repeat with the remaining cookies and chocolate filling.
- Allow the chocolate filling to set by placing the filled cookies in the refrigerator for 30 minutes.
- Serve and enjoy!
