Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup heavy cream

Directions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until well combined.
  6. Using a tablespoon or cookie scoop, drop rounded portions of dough onto the prepared baking sheet.
  7. Bake for 10-12 minutes, or until the edges are set and the centers are slightly soft.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  9. Transfer the cookies to a wire rack to cool completely.
  10. While the cookies are cooling, prepare the chocolate filling. In a microwave-safe bowl, combine the chocolate chips and heavy cream.
  11. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is melted and smooth.
  12. Allow the chocolate filling to cool for a few minutes.
  13. Once the cookies have cooled, spoon a dollop of chocolate filling onto the bottom of one cookie.
  14. Place another cookie on top, bottom-side down, to create a sandwich. Gently press together.
  15. Repeat with the remaining cookies and chocolate filling.
  16. Allow the chocolate filling to set by placing the filled cookies in the refrigerator for 30 minutes.
