Grilled Mahi-Mahi
Ingredients
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon ground turmeric
2 teaspoons ground cumin

Directions
Heat the olive oil in a large skillet over medium heat.
Add the onion and cook, stirring occasionally, until softened, about 5 minutes.
Add the garlic and cook, stirring, for 1 minute.
Add the turmeric, cumin, coriander, ginger, cinnamon, and cayenne pepper and cook, stirring, for 30 seconds.
Add the tomatoes and cook, stirring occasionally, until the tomatoes begin to break down, about 5 minutes.
Add the chickpeas and coconut milk and stir to combine.
Bring to a simmer and cook, stirring occasionally, until the sauce thickens, about 10 minutes.
Stir in the lemon juice and season with salt and pepper, to taste.
Garnish with cilantro and serve.

You can also use fresh tomatoes in place of canned in this recipe.
