Alaska Salmon Bake with Pecan Crunch Coating

Ingredients

  • 4 salmon fillets (6 ounces each)
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups pecans, roughly chopped
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Directions

  1. Preheat the oven to 400°F.
  2. In a small bowl, mix together the Dijon mustard, honey, olive oil, salt, and pepper. Set aside.
  3. In a separate bowl, mix together the pecans, Parmesan cheese, and parsley. Set aside.
  4. Place the salmon fillets in a greased baking dish. Brush each fillet with the Dijon mustard mixture.
  5. Sprinkle the pecan mixture over the top of the salmon fillets.
  6. Bake for 15-20 minutes, or until the salmon is cooked through.
  7. Serve warm and enjoy!
