Ingredients

  • 4 chicken breasts
  • 2 tablespoons vegetable oil

  • 2 dried ancho chili peppers, stemmed and seeded
  • 2 dried guajillo chili peppers, stemmed and seeded
  • 2 tomatoes, chopped
  • 2 tablespoons sesame seeds
  • 1/4 cup almonds
  • 2 tablespoons raisins
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cumin
  • 2 cups chicken broth
  • 1 ounce dark chocolate, chopped
  • Salt and pepper to taste

Directions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic to the skillet and cook until softened.
  3. Meanwhile, heat a separate skillet over medium heat and toast the dried chili peppers, sesame seeds, almonds, and raisins until lightly browned and fragrant.
  4. Transfer the toasted ingredients to a blender or food processor and add the chopped tomatoes, cinnamon, oregano, cloves, cumin, and a splash of chicken broth. Blend until smooth.
  5. Add the blended sauce to the skillet with the onions and garlic, and cook for a few minutes to incorporate the flavors.
  6. Season the chicken breasts with salt and pepper, then add them to the skillet with the sauce.
