Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 2 medium carrots, grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro, for garnish

Directions

  1. Rinse the rice thoroughly under cold water until the water runs clear.
  2. In a saucepan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion turns translucent.
  3. Add the grated carrots to the saucepan and cook for 2-3 minutes until they start to soften.
  4. Add the ground cumin, ground coriander, turmeric powder, red chili powder, and salt. Stir well to combine all the spices with the carrots.
  5. Add the rinsed rice to the saucepan and stir to coat the rice with the spice mixture.
  6. Pour in the water and bring it to a boil. Once it starts boiling, reduce the heat to low and cover the saucepan.
  7. Let the rice cook for about 20 minutes or until all the water is absorbed and the rice is tender.
  8. Once the rice is cooked, remove the saucepan from the heat and let it sit covered for 5 minutes.
  9. Fluff the rice with a fork to separate the grains. Garnish with fresh cilantro.
  10. Serve the carroty rice as a flavorful side dish or enjoy it on its own.
