Ingredients
- 8 ounces rice noodles
- 2 cups shredded cabbage

- 1/4 cup chopped green onions
- 1/4 cup chopped roasted peanuts
- 1/4 cup sesame seeds
- 1/4 cup lime juice
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 2 tablespoons sesame oil
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 1 teaspoon Sriracha sauce (optional)
Directions
- Cook the rice noodles according to the package instructions. Drain and rinse with cold water.
- In a large bowl, combine the cooked rice noodles, shredded cabbage, shredded carrots, chopped bell peppers, sliced cucumber, chopped cilantro, chopped mint, chopped green onions, chopped roasted peanuts, and sesame seeds.
