Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 pound smoked sausage, such as Andouille, sliced
  • 1/2 cup all-purpose flour
  • 1/2 cup vegetable oil
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 4 cups chicken broth
  • 2 bay leaves
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper, to taste
  • 4 green onions, sliced
  • Cooked rice, for serving

Directions

  1. In a large Dutch oven or stockpot, heat the vegetable oil over medium heat. Add the flour and whisk continuously to make a roux. Cook the roux, stirring constantly, until it turns a dark caramel color, around 15-20 minutes.
  2. Add the diced onions, bell peppers, celery, and garlic to the roux. Cook for 5 minutes, until the vegetables start to soften.
  3. Add the chicken thighs and sausage to the pot. Cook, stirring occasionally, until the chicken is browned on all sides.
  4. Stir in the diced tomatoes, chicken broth, bay leaves, Cajun seasoning, dried thyme, dried oregano, paprika, cayenne pepper, salt, and black pepper. Bring the mixture to a boil.
  5. Reduce the heat to low and let the gumbo simmer for 30 minutes to allow the flavors to meld together and the meat to become tender.
  6. Remove the bay leaves and adjust the seasoning if needed.
  7. Serve the Cajun Chicken and Sausage Gumbo over cooked rice. Garnish with sliced green onions.
  8. Enjoy the authentic flavors of Louisiana in every bite!
