Tofu Chanpuru is a traditional Okinawan stir-fry dish that is packed with flavor and healthy ingredients. This vegan-friendly recipe combines tofu, vegetables, and spices to create a delicious and filling meal. With a preparation time of just 30 minutes, it is a quick and easy dish to make for lunch or dinner. The combination of crispy tofu and a savory sauce makes this dish a favorite among both vegans and meat-eaters.

Ingredients

  • 1 block of firm tofu
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 tablespoon of grated ginger
  • 2 tablespoons of vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Optional: red pepper flakes for extra spice

Directions

  1. Drain the tofu and press it between two paper towels or a clean kitchen towel to remove excess moisture. Cut the tofu into cubes or slices.
  2. In a small bowl, mix together the soy sauce and sesame oil to make the marinade.
  3. Place the tofu in a shallow dish and pour the marinade over it. Let it sit for at least 10 minutes to absorb the flavors.
  4. Heat the vegetable oil in a large skillet or wok over medium heat. Add the garlic and ginger and cook for 1 minute until fragrant.
  5. Add the sliced onions and bell peppers to the skillet and cook for 5-7 minutes until they start to soften.
  6. Push the vegetables to one side of the skillet and add the marinated tofu to the empty side. Cook for 4-5 minutes on each side, or until the tofu is golden brown and crispy.
  7. Combine the tofu with the vegetables in the skillet and toss everything together. Cook for an additional 2-3 minutes to let the flavors meld.
  8. Season with salt, pepper, and optional red pepper flakes if desired.
  9. Garnish with chopped green onions and serve hot.
  10. Enjoy your delicious tofu-chanpuru!
