Ingredients

  • 1 head of cabbage
  • 2 tablespoons olive oil
  • 1 onion, diced

  • 1 red bell pepper, diced
  • 1 carrot, grated

  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Directions

  1. Remove the outer leaves of the cabbage and rinse it under cold water. Cut the cabbage into wedges and remove the core.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until they become translucent.
  3. Add the diced red bell pepper and grated carrot to the pot. Sauté for a few minutes until the vegetables are softened.
  4. Sprinkle the paprika and cumin over the vegetables and stir well to coat them evenly.
  5. Place the cabbage wedges in the pot, arranging them in a single layer. Season with salt and pepper.
  6. Pour enough water into the pot to almost cover the cabbage. Bring the liquid to a boil, then reduce the heat to low. Cover the pot and simmer for about 25 minutes, or until the cabbage is tender.
  7. Remove the cabbage wedges from the pot and arrange them on a serving platter. Spoon the cooked vegetables and broth over the cabbage.
  8. Garnish with fresh chopped parsley and serve hot.
