Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup cold water
  • 2/3 cup packed brown sugar
  • 1/2 cup corn syrup
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup raisins or pecans (optional)

Directions

  1. In a food processor, combine the flour and granulated sugar. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs.
  2. Gradually add cold water while pulsing until the dough comes together. Transfer the dough onto a lightly floured surface and knead a few times until smooth. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 400°F (200°C).
  4. On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Using a round cookie cutter or a glass, cut out circles slightly larger than the size of your tart molds.
  5. Gently press the dough circles into the tart molds, ensuring they fit snugly along the bottom and sides. Trim any excess dough.
  6. In a mixing bowl, whisk together the brown sugar, corn syrup, melted butter, eggs, vanilla extract, and salt until well combined.
  7. If using raisins or pecans, divide them evenly among the tart shells. Pour the brown sugar mixture into each tart shell, filling them about 2/3 full.
  8. Bake the tarts in the preheated oven for 12-15 minutes, or until the pastry is golden and the filling is set with a slight jiggle in the center.
  9. Remove the tarts from the oven and let them cool in the tart molds for 5 minutes. Carefully transfer the tarts to a wire rack to cool completely.
  10. Serve the butter tarts at room temperature or slightly warmed. Enjoy!
