- 1/2 cup unsalted butter, cold and cubed

- 2/3 cup packed brown sugar
- 1/2 cup corn syrup
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup raisins or pecans (optional)

- In a food processor, combine the flour and granulated sugar. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs.
- Gradually add cold water while pulsing until the dough comes together. Transfer the dough onto a lightly floured surface and knead a few times until smooth. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 400°F (200°C).
- On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Using a round cookie cutter or a glass, cut out circles slightly larger than the size of your tart molds.
- Gently press the dough circles into the tart molds, ensuring they fit snugly along the bottom and sides. Trim any excess dough.
- In a mixing bowl, whisk together the brown sugar, corn syrup, melted butter, eggs, vanilla extract, and salt until well combined.
- If using raisins or pecans, divide them evenly among the tart shells. Pour the brown sugar mixture into each tart shell, filling them about 2/3 full.
