Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped fresh parsley for garnish

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the diced onion, minced garlic, sliced carrots, sliced celery, diced green bell pepper, and diced red bell pepper. Sauté until the vegetables are tender.
  3. Add the diced tomatoes (including the liquid), chicken broth, bay leaves, dried thyme, dried oregano, paprika, salt, and pepper to the pot. Stir well to combine.
  4. Return the chicken breasts to the pot, making sure they are submerged in the liquid. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for 40 minutes, or until the chicken is cooked through and tender.
  5. Once the chicken is cooked, remove it from the pot and shred it using two forks. Return the shredded chicken to the pot and stir well to combine. Adjust the seasoning if needed.
  6. Simmer the Booyah Chicken for an additional 10 minutes to allow the flavors to meld together.
  7. Serve the Booyah Chicken hot, garnished with chopped fresh parsley. Enjoy!
