Ingredients

  • 12 tomatillos
  • 4 garlic cloves
  • 1 jalapeno pepper
  • 1/2 cup chopped onions
  • 1/2 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Directions

  1. Preheat your broiler to high.
  2. Remove the husks from the tomatillos and rinse them under running water to remove any stickiness.
  3. Place the tomatillos, garlic cloves, and jalapeno pepper on a baking sheet lined with foil.
  4. Broil the vegetables for 5-7 minutes, turning them occasionally, until they are charred and softened.
  5. Remove the baking sheet from the broiler and let the roasted vegetables cool slightly.
  6. Once cooled, transfer the tomatillos, garlic cloves, and jalapeno pepper to a blender or food processor.
  7. Add the chopped onions, cilantro, lime juice, salt, and pepper to the blender.
  8. Blend the ingredients until you achieve your desired consistency. If you prefer a chunkier salsa, pulse the blender a few times.
  9. Taste the salsa and adjust the seasonings according to your preference.
  10. Transfer the salsa to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  11. Serve the roasted tomatillo and garlic salsa with tortilla chips or as a topping for your favorite Mexican dishes.
  12. Enjoy!
