  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/2 cup chopped red onion
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 can diced tomatoes, drained
  • 1/2 cup Kalamata olives
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese
  • Fresh parsley, chopped for garnish

Directions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Season the chicken breasts with salt and pepper, then add them to the skillet. Sear them for about 3-4 minutes on each side until they are golden brown.
  4. Remove the chicken from the skillet and set it aside.
