Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups unsalted butter, softened

  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 2 (8-ounce) packages cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pink gel food coloring
  • Mini chocolate chips
  • M&Ms or jellybeans
  • Shredded coconut
  • Green food coloring

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.
  5. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cakes cool in the pans for 10 minutes. Transfer the cakes to a wire rack to cool completely.
  7. In a mixing bowl, beat the cream cheese and butter until smooth and creamy. Gradually add the powdered sugar and vanilla extract, beating until well combined.
  8. Remove one cake layer from the wire rack and place it on a serving plate. Spread a layer of cream cheese frosting on top.
  9. Place the second cake layer on top and frost the top and sides of the cake with the remaining cream cheese frosting.
  10. Mix a few drops of pink gel food coloring into a small portion of the frosting to create a lighter pink shade. Use this pink frosting to pipe the bunny's ears and mouth on the top of the cake.
  11. Stick two mini chocolate chips into the cake to create the bunny's eyes.
  12. Decorate the bunny's nose with a pink M&M or jellybean, and use shredded coconut tinted with green food coloring to make grass around the bunny.
