Ingredients

  • For the tart crust:

  • - For the blackberry curd:
  • - 2 cups fresh blackberries
  • - ½ cup granulated sugar
  • - ¼ cup fresh lemon juice
  • - 3 large eggs
  • - ½ cup unsalted butter, cubed

  • - Fresh blackberries

Directions

  1. Preheat your oven to 375°F (190°C).
  2. In a food processor, combine the flour, sugar, and chilled butter. Pulse until the mixture resembles coarse crumbs.
  3. Add the egg yolk and 2 tablespoons of ice-cold water. Pulse again until the dough comes together. If needed, add an extra tablespoon of water.
  4. Transfer the dough onto a lightly floured surface and shape it into a disc. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  5. In the meantime, prepare the blackberry curd. In a small saucepan, combine the blackberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the blackberries soften and release their juices.
  6. Remove the saucepan from heat and strain the mixture through a fine-mesh sieve, pressing the pulp to extract as much liquid as possible. Discard the solids and return the strained liquid to the saucepan.
  7. In a separate bowl, lightly whisk the eggs. Slowly pour the blackberry liquid into the eggs, whisking constantly to prevent the eggs from cooking.
  8. Place the saucepan back on low heat and cook the mixture, stirring constantly, until it thickens and coats the back of a spoon. This should take about 10-15 minutes.
  9. Remove the saucepan from heat and add the cubed butter. Stir until the butter is completely melted and incorporated into the curd.
  10. Take the tart dough out of the refrigerator and roll it out on a lightly floured surface to fit your tart pan. Press the dough into the pan, trimming any excess.
  11. Using a fork, prick the bottom of the tart crust. This will prevent it from puffing up during baking.
  12. Bake the tart crust in the preheated oven for about 15 minutes or until golden brown. Remove from the oven and let it cool completely.
  13. Once the tart crust is cool, pour the blackberry curd into the crust and spread it evenly.
  14. Refrigerate the tart for at least 2 hours, or until the curd is set.
