Ingredients

  • 6 bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, cook the ground beef over medium heat until browned. Remove from the heat and drain any excess fat.
  4. In the same skillet, sauté the onion and garlic until they become translucent.
  5. Add the cooked rice, diced tomatoes, dried basil, dried oregano, salt, and pepper to the skillet. Mix well.
  6. Stuff the bell peppers with the beef and rice mixture and place them upright in a baking dish.

  9. Remove the foil and continue baking for an additional 10 minutes, or until the bell peppers are tender and the cheese is melted and bubbly.
