This apricot coffee cake is a delightful treat that combines the sweetness of apricots with the bold flavor of coffee. It's perfect for breakfast, brunch, or just as a snack with your coffee or tea.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup dried apricots, chopped
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup strong brewed coffee

Directions

  1. Preheat oven to 350°F and grease a 9-inch round cake pan.
  2. In a medium bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.
  3. Stir in sour cream and vanilla extract.
  4. In a separate bowl, combine flour, baking powder, baking soda, and salt. Gradually add to the wet mixture and mix until well combined.
  5. Spread half of the batter into the prepared pan.
  6. In a small bowl, mix together dried apricots, nuts, brown sugar, and cinnamon. Sprinkle half of this mixture over the batter in the pan.
  7. Cover with the remaining batter and sprinkle the remaining apricot mixture on top.
  8. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  9. While the cake is baking, brew a strong cup of coffee.
