Ingredients
- 2 red bell peppers
- 2 garlic cloves
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
Directions
- Preheat your oven to 425°F (220°C).
- Cut the red bell peppers in half and remove the seeds and stems.
- Place the bell pepper halves, skin side up, on a baking sheet lined with parchment paper.
- Roast the peppers in the preheated oven for about 25-30 minutes, or until the skins are charred and blistered.
- Remove the peppers from the oven and immediately transfer them to a bowl. Cover the bowl with plastic wrap and let the peppers steam for about 10 minutes. This will make it easier to peel off the skins.
- Once the peppers have cooled slightly, remove the skins by gently peeling them off. They should come off easily.
- Place the roasted peppers, garlic cloves, olive oil, red wine vinegar, Dijon mustard, honey, dried oregano, dried basil, salt, and pepper in a blender or food processor.
- Blend until smooth and creamy.
- Taste and adjust the seasonings if needed.
- Transfer the dressing to a jar or container and refrigerate until ready to use.
- Serve the Roasted Red Pepper Dressing over your favorite salads and enjoy!
