Ingredients

  • 2 cups all-purpose flour
  • 2 cups grated carrots
  • 1 1/2 cups granulated sugar
  • 1 cup unsweetened applesauce

  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts
  • 1/4 cup raisins
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • For the cream cheese frosting:
  • 8 oz vegan cream cheese, softened
  • 1/4 cup vegan butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Add the grated carrots, applesauce, vegetable oil, pineapple, walnuts, raisins, vanilla extract, and almond extract to the dry ingredients. Stir well until all the ingredients are combined.
  4. Pour the cake batter into the prepared baking pan, smoothing the top with a spatula.
  5. Bake in the preheated oven for about 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
