Ingredients

  • 2 1/4 cups all-purpose flour

  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for rolling)

Directions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg. Set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the molasses, egg, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Scoop rounded tablespoonfuls of dough and roll into balls. Roll the dough balls in granulated sugar to coat.
  6. Place the dough balls onto the prepared baking sheets, spacing them at least 2 inches apart.

  8. Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes.
  9. Transfer the cookies to a wire rack to cool completely.
