  • 1 package refrigerated pie crusts (2 crusts)
  • 1 tablespoon butter, cut into small cubes
  • 1 egg, beaten

Directions

  1. Preheat the oven to 425°F (220°C).
  2. In a medium saucepan, combine the dried apricots, water, sugar, and lemon juice. Bring to a boil over medium heat, then reduce the heat and simmer for 10 minutes until the apricots are soft and tender.
  3. In a separate small bowl, mix together the flour and salt. Sprinkle this mixture over the apricots and stir until well combined. Cook for an additional 2 minutes until the filling thickens.
  4. Remove the saucepan from the heat and let the apricot filling cool slightly.
  5. Place one pie crust into a 9-inch pie dish and press it firmly against the bottom and sides of the dish. Trim any excess crust.
