Try this mouthwatering recipe for a different take on the classic Chicken Cordon Bleu. It combines tender chicken breasts, savory ham, and gooey cheese, all coated in a crispy bread crumb crust. This elegant dish is perfect for a special occasion or a weeknight dinner.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 slices of deli ham
  • 4 slices of Swiss cheese
  • 1 cup bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Slice each chicken breast horizontally, being careful not to cut all the way through.
  3. Open the chicken breasts like a book and place 2 slices of ham and 1 slice of Swiss cheese inside each breast.
  4. Close the chicken breasts and secure with toothpicks to hold them together.
  5. In a shallow dish, mix together the bread crumbs and grated Parmesan cheese.
  6. Season the chicken breasts with salt and pepper.
  7. Dip each chicken breast in the flour, then in the beaten eggs, and finally coat with the bread crumb mixture, pressing gently to adhere.
  8. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  9. Add the chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side.
  10. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  11. Remove from the oven and let the chicken rest for a few minutes before serving.
  12. Remove the toothpicks and slice the chicken cordon bleu into thick slices.
  13. Serve hot and enjoy!
